The show is held under cover in a purpose built exhibition hall, Bingley Hall, on the County Showground at Stafford. The Christmas Fayre & Food Hall is held in an adjacent exhibition hall, the Prestwood Centre, which is connected to Bingley Hall by an enclose walkway; information on this section is available on request from Mrs Bradshaw on 01543 279437.Vehicular access to the ground floor of Bingley Hall is via roller shutter doors; there is limited access to the balcony for light vehicles via an external ramp. Access to the Bingley Hall for stand building will be available from Tuesday 15th November 2011. No access will be permitted prior to this date. All stands must be in place by 8.30am on Saturday 19th November 2011. The Hall will remain open between 8.00am and 5.00pm from Tuesday 15th November 2011 until Thursday 17th November 2011 and will open again on Friday 18th November 2011 from 7.00am although, due to the arrival of stock, vehicular access will be severely restricted on this day. All stands must be cleared by 5.00pm on Monday 21st November 2011 There is free overnight parking on the Showground for caravans, moreover, parking of vehicles is also free. However, it should be noted that parking vehicles on trade stand sites is not permitted. Electricity can be provided to all stands for which an extra charge is payable (see application form for details). Hospitality catering on stands is permitted provided such food and drink is free of charge.There will be no partitioning of any kind provided between stands; the charge levied applies to ground floor area rental only. The show will be open between 9.00am and 5.00pm on both days. Time of access to the Hall for clearing stands on Sunday evening will be at the discretion of the Show organisers, taking into account the safety of visitors and livestock. The Show organisers will make every effort to secure the building and security personnel will be on duty throughout the period from 6pm Friday 18th November 2011 until 8.00am on Monday 21st November 2011. The Christmas Fayre, Food Hall and Carcass Hall will be secured and locked and no access will be permitted once visitors and stand holders have cleared the building at the end of each show day. The Main Hall will be patrolled but due to the necessity of access to stock, entry to stockmen cannot be refused. The programme is kept for reference purposes during the year by most purchasers. The publication is A.5 size and produced in black/white. The Schedule is the list of classes sent to prospective competitors with entry forms contained therein. The English Winter Fair is held in Bingley Hall, the Sandylands Centre and the Argyle Centre at the Staffordshire County Showground, Weston Road, Stafford. These are purpose built exhibition halls where the whole of the Show is held under cover in heated buildings. The carcass section is held in a specially refrigerated and enclosed hall adjacent to the main exhibition area. The Showground is sited approximately 5 miles from Junction 14 of the M6 Motorway and 3 miles from Stafford town centre. There is no purpose built stockpersons accommodation on the Showground although stockpersons can be accommodated in the Staffordshire Pavilion adjacent to Bingley Hall providing they bring their own camp bed and bedding. Toilets and washing facilities are available in Bingley Hall. There is ample caravan parking space at the Showground and no charge is made for this. Please note dogs are not permitted within the buildings with the exception of guide dogs. CONDITIONS OF ENTRY
In the Sheep and Pig Sections there must be a minimum of 2 exhibitors with at least 3 entries between them for any class to stand. Animals in classes 1 - 25 must be registered with the relevant Breed Society. Complete details of pedigree, name of breeder and date of birth must be shown on the entry, and animals should bear an identification mark in compliance with their respective breed society regulations. The Society may check breeding details with the Breed Society. For entries in Sections 2 and 3 (Non Pedigree) the breed or cross of the animal MUST be clearly stated. No entries will be accepted without these details. The Society also asks all exhibitors to give a name to their exhibits and to state this on the entry form together with the ear number. Animals in the crossbred cattle section must be entered in to the breed class in accordance with the breed of the sire stated on the passport. No animal may be shown or entered in more than one class and no animal may be transferred from one class or section to another without the permission of the Society's stewards. Transfer of animals will be permitted from the Baby Beef classes in the event an animal is overweight to be shown in these classes on arrival at the Show. That animal will be transferred to its respective breed class. Animals entered in breed classes will not be eligible for transfer to the Baby Beef classes. All cattle must be double tied in their stalls. In addition Cattle must be halter led. Big Jims will not be allowed. Exhibitors are required to comply with the current TB regulations. For those cattle coming from one and two year testing parishes note it is a requirement of the SBAS that the animals at the Show are tested within 60 days before the Show. All live sheep must have electronic identification fitted in order to be shown at the Show. AML1 forms must be completed correctly prior to arrival at the Show NO SUCKLER COWS OR ANY OTHER CATTLE NOT ENTERED TO BE SHOWN WILL BE ALLOWED ONTO THE SHOWGROUND. Any exhibitor infringing this regulation will be expelled from the Show No late entries will be accepted under any circumstances after the closing dated of
Electrical safety - Exhibitors are reminded that all electrical equipment brought onto the showground must have a safety certificate issued by a qualified electrician. Furthermore, particular attention should be paid to the correct wiring of portable electrical equipment and that insulation material on extension leads is not damaged All exhibitors must hold a minimum of £2.5 million indemnity for public liability insurance. Appointed English Winter Fair Judges will not be allowed to enter any section of the Show in the year in which they are judging. * correct at date of going to press ENTRY FEES (Including VAT) & STALLING ACCOMMODATION The stall system will operate for all cattle entries. An exhibitor may reserve any number of stalls to house the total number of cattle he intends to bring to the Show. Moreover, he may reserve additional stalls for the storage of equipment and fodder. However, Exhibitors are asked to note that a minimum of one stall must be reserved for each animal entered. Exhibitors may have catalogued any number of animals in accordance with entry fees below. Accordingly exhibitors are asked to co-operate by not booking any more stalls than they require and should be noted that stalls may be restricted by the Society if deemed necessary. Moreover if stalls are found not to be required up to and including 6th November 2011 exhibitors are asked to inform the Secretary for a full refund of stall fees.Beef Cattle:

Please note by joining the SBAS the member will be entitled to enter the Staffordshire County Show on 6th & 7th June 2012 at the preferential members rate. Stockmen's passes will be issued in relation to the number of live animals entered as detailed below:

In the Beef Cattle Section: The 4th Prize will only be awarded when there are at least 8 entries forward The 5th Prize will only be awarded when there are at least 10 entries forward The 6th Prize will only be awarded when there are at least 12 entries forward In classes where there is only one entry forward, 2nd Prize money only will be awarded. In the Pig Section: The 1st Prize will only be awarded where there are at least 2 entries forward. The 2nd Prize will only be awarded where there are at least 4 entries forward. The 3rd Prize will only be awarded where there are at least 6 entries forward. The 4th Prize will only be awarded where there are at least 8 entries forward.
Payment of prize money will be made by the Society between 3.15pm and 4pm on the Sunday afternoon of the Show on receipt of prize vouchers. With the exception of prizes over £300, all prize money will be paid in cash. Any prize money not claimed on the day will be sent by cheque after the show. Trophies awarded will be held by the exhibitor for one year, during which time the exhibitor will have total liability for the safety of the trophy and will be liable to insure the trophy against loss or damage. Exhibitors may have the trophy engraved at their own expense if so wished. Exhibitors are asked to ensure that trophies are returned in good time for representation at the next years Show to avoid disappointment to other exhibitors. ACCOMMODATION IN BINGLEY HALL In order to comply with bio security and veterinary inspection regulations the times livestock will be permitted to enter the site is laid down in the exhibitors pack must be adhered to. Stock will not be allowed to leave on Sunday 20th November before 3.30pm. Weighing will take place on Friday 18th November 2011 of all animals - cattle between 1pm and 4pm, sheep between 1pm and 3pm and pigs between 3pm and 4pm. All weighing must be completed by 4.30pm at the very latest. PLEASE ENSURE PASSPORTS ARE MADE AVAILABLE AT THE WEIGH IN. No washing of cattle in the weighing area will be permitted during these times. The Chief Steward and Deputy Chief Steward will be present at the weighing of the cattle and in the event of there being any doubt about the eligibility of the animal for the class in which it has been entered , their opinion will be final. Moreover, if they believe the animal is not of the breed or cross stated, they retain the power to transfer the animal to the correct class. INFORMATION ON DEFRA REGULATIONS APPLYING AT THE TIME OF THE SHOW WILL BE SENT TO EXHIBITORS WITH THEIR EXHIBITOR'S PACK. PLEASE NOTE THAT NO STRAW WILL BE AVAILABLE FOR USE BY EXHIBITORS AND YOU ARE THEREFORE ASKED TO MAKE YOUR OWN ARRANGEMENTS IN THIS REGARD. AUCTION SALE The Official Auctioneers will be Messrs Bagshaws of Uttoxeter, Bakewell, Ashbourne and Derby All stock offered for sale by auction are sold under the National Conditions of Sale as recommended by the Livestock Auctioneers Association. A continuous sale by Auction will be held on Sunday commencing at 2pm with beef carcasses, lamb carcasses and pork carcasses as well as turkeys ; live pigs at 2.15pm, live sheep at 2.45pm and live beef cattle at 3.30pm with the sale of the Beef Champions at 3.45pm. Vendors of animals are expected to assist in getting their stock to and from the selling rings. No carcasses may be removed from the Carcass Hall until after the completion of the carcass sale. Facilities can be offered for overnight storage of carcasses purchased under refrigerated conditions and a limited butchering service will also be available. This should be arranged directly with the Carcass Hall Stewards. The Supreme Champion and Reserve Champion animals in the cattle section together with the Baby Beef cattle will be sold per head and the remainder in the cattle section sold pence per kg. All exhibitors are asked to note that it is a condition of entry that the owners of the animals taking the Supreme and Reserve overall Championship in the beef, sheep, pig and carcass sections must offer their exhibits for sale. Should the Supreme Champion beef animal not be sold and paid for in full a two year ban from exhibiting at the Show will be placed on the exhibitor concerned. The Auctioneers will accept a reserve for these animals or carcasses but in the event of the reserve not being reached a commission of 4% will be charged and this will be based on the reserve figure fixed by the vendor. IF THE CHAMPION ANIMAL - BEEF, PIG AND SHEEP - IS SOLD THAT ANIMAL WILL NOT BE ELIGIBLE TO BE SHOWN AGAIN IN 2011. In the event of a supreme overall champion in the Beef, Pig, Sheep or Carcass section not being sold, all prize money appertaining to that animal including class prize money, with the exception of the sponsorship provided by Zintec Agric Ltd for Supreme beef animal and the Sponsorship provided by Blue Merle Ltd for the Supreme Pen of Lambs, will be withheld. As regards non-champion winners in the cattle sections, exhibitors may place reserves on their animals before the sale but if not reserved by that time the animals will be sold without reserve. A charge of £5 will be made should the animal not be sold. A commission of 4% will be charged by the Society on all cattle and cattle carcasses sold; 5% on live sheep and pigs as well as lamb and pork carcasses, 8% on turkeys. Payments to vendors will be made direct by Messrs Bagshaws on the Friday following the sale. The beef cattle auction will commence with the crossbred cattle with a ballot being drawn to determine the crossbred cattle order of sale. Thereafter, pedigree cattle will be sold in strict numerical order followed by the baby beef.. Any late notifications to the auctioneers will be sold at the end of the auction A ballot will be drawn in order to determine the live sheep and live pig order of sale. Each exhibitor shall be solely responsible for any loss, injury or damage that may be done to, or occasioned by or arising from any animal, article or property exhibited or brought on to the Showground by him and he shall indemnify and hold harmless the Society from and against all actions, suits, expenses and claims on account of or in respect of any such damage or injury, which may be so caused or occasioned. The Society, its Officers or Servants will not be liable for any errors or mistakes that may happen in placing, or penning the stock or articles to be exhibited but the servants in charge of the same must see that they are placed according to their entries. The Society expects all exhibitors to have had experience in display of livestock at Shows and all exhibitors should be aware of the distractions that can be caused to exhibits in their possession during the course of the event. The decision of the Chief Steward will be final in the event of any objection raised on eligibility, judging, award and prizes and other related matters. a) Power to Enforce Regulations. The Committee delegates full power to the Stewards to enforce the Society's Rules and Regulations. b) The Current Chairman, Chief Steward and Chief Ring Steward of the English Winter Fair are prohibited from exhibiting at the Show during their terms of office.

Conditions of Entry 1. Meat products must be made on the premises of the retailer, by the retailer or his staff. Butchers, farm shops and small companies may enter. 2. All meat products must be identified by their product name only on a sticky label placed on the over wrapping, and must not contain the BUSINESS NAME. Five penalty points will be deducted if rules are not adhered to. 3. Meat products must contain red meat from animals produced in Britain i.e. beef, pork or lamb or a combination pork, ham and bacon 4. Sausage entries must consist of 454gms (1lb) of uncooked sausages and cooked sausages that weighted 454gms (1lb) prior to cooking. If the cooked sausages weigh the same or more than the uncooked, points will be deducted. Sausages may be linked or presented individually, with no limitation to the number of sausages to the 454gms (1lb), but the entry must contain an equal number of uncooked and cooked sausages. TO NOTE: Beware of under cooking and over cooking, as well as appearance and shrinkage. 5. All classes of sausages to be presented on (M3 or similar sized) white polystyrene trays, over wrapped and without garnish. 6. Cold eating pie entries must consist of two cooked pies per entry, labelled with weight and name. 7. Hot eating pie entries must consist of two cooked pies per entry, labelled with weight and name. Reheating instructions must also be clearly labelled. 8. All pies to be presented on white polystyrene trays, over wrapped and without garnish. There is no size restriction. 9. Home cured back entries must consist of 2 x 227gms (8oz approx) of rashers per entry, vacuum packed (if possible) 10. Gammon steaks must consist of 2 x 227gms (8oz approx) steaks per entry, vacuum packed (if possible 11. All the entries must arrive chilled and be in suitable and hygienic packaging 12. Entries will not be returned and will be disposed of by the organizers at the end of the competition 13. The decision of the judges will be final and no correspondence will be entered into after the event. 14. A copy of your evaluation forms will be available after the competition has been completed and some of the judges may be available to talk through the results with you. 15. Awards will be given for products that reach given criteria, in overall appearance, size, colour, texture, taste and smell. A fuller explanation of the NASCO rules is available on the www.porkforbutchers.co.uk website. 16. Any infringement of the rules will be penalised by 5 points. 17. Product evaluation criteria: Gold 95 – 100 points Silver 90 – 94 points Bronze 85 – 89 points 18. Prizes Each class winner will be presented with a cut glass trophy. The Supreme Champion Product will receive the overall trophy. Gold, Silver and Bronze Certificates will be awarded to the entries reaching the required standard in each class. The overall winner from the Sausage Classes will be put forward for the next National "Champion of Champions" Competition. The October 2010-born Miss Scarlett secured the Sellers £1000 prize money from sponsor Zintec and the Birmingham Post Challenge Trophy for the Champion animal. Auction results see a strong trade for livestock and carcases. Date: 21/11/11 Embargo: nil A strong trade across all live and carcase classes for beef, lamb and pork has seen a significant increase in returns to exhibitors at last weekend's English Winter Fair livestock showcase, Stafford. Auctioneers Bagshaws report returns to producers were significantly better for all three species from the showring than the current strong trade for beef and lamb in livestock markets and direct sales. In the live cattle championship Phil & Sharon Sellers' Zintec-sponsored Supreme Champion Miss Scarlet, a 575kg liveweight October 2010-born Limousin x Limousin, made £4150 (£7.22/kg liveweight) to Lee Machin of Derbyshire-based Manifold Valley Meats. Andrew Bishop's Reserve Supreme Champion Black Beauty, a 565kg liveweight August 2010-born Limousin x Limousin/BritishBlue, made £2720 (£4.81/kg liveweight) to Nottingham-based C Bowring.Baby beef cattle topped at £3000 (£8.70/kg liveweight) paid for Lawson & Wilkinson's Limousin X April 2011-born heifer named Lulu which was purchased by fellow exhibitor G R Fountaine.A total of 71 cattle were forwarded achieving an average of £3.17/kg liveweight, reports Bagshaws' Malcolm Gale. "It was a very good trade. We would expect strong commercial cattle in an auction mart to be around £2.20/kg liveweight and taking out the top champions the quality commercial cattle at the English Winter Fair achieved £2.30-£2.40/kg." In the Live Lamb auction Steve & Sara Gibbons' Blue Merle-sponsored Supreme Champion pen of lambs (Texel) sold for £590 (£11.39/kg liveweight) apiece to the day's judge Martin Brown of Newton-le-Willows, North Yorks. Reserve Supreme Champion lambs from David Wadland (Beltex) were not offered for sale. A total of 74 lambs were forwarded averaging £2.87/kg liveweight (£133/head): "Another good trade," said Mr Gale. In the Live Pigs new exhibitor Mark Horsley from Skirpenbeck, North Yorkshire, saw his Pietrain pair make £170/head to fellow exhibitor Sue Hicks. The Reserve Supreme Champions were not offered for sale. Overall pigs averaged £1.20/kg liveweight (£98.38/head). In the Michael Bradshaw Memorial Carcase Hall classes Bryan & Carole Wilson's Supreme Champion beef carcase - a home-bred 308kg Limousin X carcase - made £5.10/kg (£1544 gross) to the section's judge and local retail butcher Rob Stafford. The Wilson's Reserve Supreme Champion carcase - a 380kg Limousin X - made £4.40/kg (£1673 gross) to G A Cropper of Ackrington. Overall, beef carcases averaged £4.17/kg deadweight. Lamb Carcase Champion and Reserve taken by O P & A Beresford of Ashbourne, Derbyshire, sold for £10.00/kg (£241 gross) and £10.30/kg (£266 gross), respectively, to Lee Machin of Manifold Valley Meats, Derbyshire. Overall, lamb carcases averaged £4.75/kg deadweight. In the pig carcase classes Mark Horsley's Supreme Champion (Pietrain) made £3.80/kg deadweight (£245 gross) to Nottingham-based R Bowring. His Reserve Supreme Champion made £5.00/kg deadweight (£320 gross) to Bridgnorth, Shropshire-based M & S Meats. Overall pig carcases averaged £2.42/kg deadweight. British Pig Executive (BPEX) Pork Products Competition, Nov 20, 2011 Holywell butcher Michael Kennedy's desire to spice up the British public's love affair with the humble banger has won him the top title of Supreme Sausage Champion 2011 at a last weekend's English Winter Fair (Nov 20), Stafford, with a lively Morrocaan Lamb sausage that won Best Product in Show that he has produced to his own recipe. In a competition that saw a total of 188 pork products forward Mr Kennedy's sausage combines heat and sweetness consumers adore, he said. "The sausage sees the sweetness of dried fruit compliment the gentle heat of chilli to produce a wonderful lamb sausage. "It's been an honour to win the Supreme Sausage Champion 2011 but its not been easy. Ask consumers if they'd like to try a lamb sausage and most are alittle reluctant. But we cooked some and said please try our Morrocaan sausage they really like it. Many are very surprised to find it's made with lamb." Mr Kennedy of F R Kennedy and Son, Holywell, near Chester, is no stranger to sausage competitions travelling up and down country looking to share information and get ideas to produce the perfect banger. "If there is one golden rule it is use good ingredients from start to finish." Mr Kennedy first entered the BPEX competition at the English Winter Fair in 2010 with four products that scored 98/100 twice and 100/100 twice. "But to win the Supreme title this year tops it all."
